Months prior, discussions with Dan Woolley sparked the idea of collaborating on a whisky paying homage to the Anzacs. Dan's excitement was palpable as he revealed a cask that had undergone a unique ageing process, first housing rye before embracing the essence of maple syrup, promising a biscuity, golden syrup sweetness.
Dan's peated Highwayman spirit embarked on its ageing journey, commencing in multiple 40L first-fill ex-bourbon barrels for over 2 years before being amalgamated and transferred into a full-size first-fill ex-Heaven Hill bourbon cask for over 7 months.
The sensory journey begins with the nose, greeted by notes of sweet cherry cola and cinnamon-spiced golden syrup, a nod to Anzac inspiration. Apricot jam and subtle hints of nutmeg and star anise intertwine with caramel and vanilla fudge, leading to hazelnut praline enveloped in milk chocolate, accompanied by delicate whispers of toffee and a subtle salty, savoury, and earthy peatiness.
